Process Summary
The FlavorSense drying technology is a gentle, versatile process that retains and encapsulates volatile flavors during the drying process. The versatility of the process allows us to combine real ingredients like celery with a flavor to deliver a flake which contains both the nonvolatile and volatile portions of the flavor. This allows us to mimic the real ingredient and the addition of flavor allows us to be cost effective! The process and ingredients are organically approved, and the market demand for organic flavors/ingredients is growing.
- Nutritionally, we can encapsulate the bioactive components of many foods and extracts at a lower cost than freeze drying. The versatility of the process allows us to encapsulate high fat products without oxidation (at 40-50% loads), retain enzyme activity and important substrate concentrations.
- The usage levels range between 0.05-0.5%. FlavorSense works closely with product developers to create flavors and ingredients that will work in their specific application and cost constraints.
- Our goal at FlavorSense is to create nutritionally sound, cost effective, flavorful ingredients for use in “healthy” foods.
